It is a question of mutual trust and belief. Tell her the same thing. You need not prove your honesty. If she doesn't believe still, that is her problem. Don't worry. Keep your cool. She will realise slowly.

If you deleted the texts from your phone call up your ex sounds crazy but tell her to tell or show your girlfriend what you texted her if there's nothing to hide it looks like that's the only way but its a way to prove to her you were being honest trust me the only thing I value from my boyfriends is his honesty.
