It can be very expensive to go gluten-free if you want to replace regular gluten containing products with gluten free substitutes. Gluten free breads and other products are expensive. There are a lot of grains that don't contain gluten, such as millet, rice, and corn meal.
I don't have Celiac Disease so I don't have to be strict about it. For example, I don't avoid soy sauce that has gluten. However, I have problems digesting wheat so I avoid bread, pasta, etc. I chose not to go with gluten free substitutes. I just don't eat bread and other baked goods, no matter what they are made of. Instead of pasta, I eat spaghetti squash. It's easy to choose foods that are naturally gluten free, as long as you can give up bread type products.

I do it because of how genetic modification and cross breeding has broken down the wheat crop so badly on a molecular level to the point where it not only isnt wheat anymore but it now is basically an opiate that causes carb cravings. Wheat also induces inflammation by causing spikes in blood sugar. This is also the source of much gluten intolerance as well. The increasing number of these cases in recent years is no coincidence.
It really isnt hard to follow a gluten free diet nor is it expensive. You can buy gluten free grains in bulk at whole foods relatively cheap and cooking is kinda fun because it challenges you and forces you to be creative at times.

I'm a celiac, so VERY strictly. I can't even kiss someone who just ate gluten or it can make me sick.
The expense depends on whether you find foods that are naturally gluten free and eat those, or if you decide to try and mimic your old menu items with gluten free substitutions.
If you do the first, it's pretty cheap. If you do the second, it's about 3 to 4 times more expensive than your regular grocery bill.
