name a dish I can use 5 pretty Zucchini in--NEVER have used or eaten it before?

Hey I have eggplant too (my absolute favorite) also-

sounds great! I may have to use the eggplant out of my fridge and give away the zucchini ha!

    Slice them up really thin, long ways, fry them lightly until golden brown, then set them aside.

    take some ground beef, season it with your favorite seasonings, add some mint and parsley, mix it all up.

    take the ground beef and put a little bit in the zucchini and roll it up. put them in a casserole dish and then put some tomato sauce on top. you can add sliced onions and tomatoes on top and then bake it until the beef is cooked. it is delicious!

    I make this with eggplant as well. same procedure, just eggplants. It is soooo good!!
