Thin diabetics, what are some foods you can eat in abundance?
For those of us who have the opposite problem from the typical larger diabetics, and could stand to GAIN weight, and want to be able to eat more without raising our sugar levels too high, what are some foods you can eat in more abundance?
in other words, NOT things we have to eat in small amounts like fruit, bread, pasta, etc.

I do eat carbs, but you want high calorie low carb foods- a lot of people go for meats. I'm a vegetarian myself, so I don't do that.
I do find avocados are something I tolerate really well. I like beans a lot - they do require some insulin for me- and I sometimes eat an entire package of tofu (with soy sauce) in one sitting.
When I was diagnosed, they recommended nuts and peanut butter as something I could eat without having to take insulin, but my experience is that they do raise my blood sugar considerably- I do inject for those things too.
