How do I make my bread bowls taller?

I've decided to start making bread bowls to hold chowder and things, but my bread always spreads out a bit. This is fine for normal bread, but I think it would be better if the bowls were taller and deeper rather than wider. Any suggestions for getting them that way that won't harm the flavor or the appearance of the bread?

Update:

I'm using a sour dough made from natural yeast. The bread is delicious, but it does tend to spread out more.

    You might need to use a different dough.

    The bakery I worked at always used sour dough to make bread bowls as they held up better, didn't spread quite so much and ended up with a good crusty exterior.

    Use a bigger bowl form or a coffee can to form the dough higher.
