What type of sausage to use in Scotch Eggs?
Would breakfast sausage be good or Italian? Is there a recipe for the sausage so I can make it myself or find a match here in the states?

Italian hot and spicy pork links taste best in my opinion. Guess what chorizo (Mexican sausage) works too. I like to chop to break it up and pan fried to remove the fat. Then I mix the sausage into the flour with 2 beaten eggs , pepper, no salt, to bind it. Wrap the batter around the hard boiled eggs, egg wash and rolled in breadcrumbs then bake. I like to add chopped jalapeno into the sausage/flour mix too *

People have modified the recipe as they do almost everything (the one by Cecesan sounds good!), but the traditional Scotch eggs would use a nice, sagey breakfast sausage. Buy the bulk variety instead of links just to make the process easier.

Hi,
Sausage meat is one of those "unobtainium" items in Japan, so I make my own. I've used this (and similar) recipes for baked sausage rolls, wrapped in flaky pastry and they were fantastic! The same formula, minus the casings, would also be excellent for scotch eggs! Proof below...

Yummm I love Scotch Eggs, never made em myself BUT if I was to try I'd buy plain sausage like not too much fat and spice them myself, parsley, garlic powder, S&P, sage ? maybe ? I'd stay away from Italian spices Breakfast sausage, I think would be a great choice too

Use bulk pork sausage. That's the stuff that is not preformed or in casings. Some markets make it in-house or you can use commercial brands like Ole' Folks, or Jimmy Deans, depending on availability. Don't know where you live or what's local for you.

Scotch!! Not Japanese, Mexican, nor American! The recipe below is close to mine. Everyone will find it lovely, unless you tell them the recipe. I usually wait a week before telling anyone about the haggis.
