Where can I find the itinerary or route in regards to driving from Melbourne to Sydney via Great Alpine Rd?

To do that you'd have to drive east to Bairnsdale then take the Great Alpine Road up to Wangaratta and join the Hume Highway to Sydney. Or I suppose you could take the Hume from Melbourne to Wangaratta, then the GAR to Bairnsdale then the Princes Highway to Sydney. Either way, it's a major diversion. I'd have to say it's well worth the drive; and I'd rather drive the Princes Highway (coast road) than the Hume, if time allowed.
