Actually, gluten grains foods (anything made with wheat, rye, barley ingredients) and grains in general are among the most likely foods to make you gain weight. Things such as bread, pasta, cereal, crackers, cookies, cake, breading, crusts, etc.

No reason you should. Your boyfriend probably isn't a doctor or a dietitian. What makes him think you'd gain weight on a gluten-free diet?

It may at first, until you increase your fiber from other sources (fiber is needed for good bowel movement and without a good bowel movement you can have a few pounds heavier), so make sure that you eat plenty of fibrous food and ruffage (leafy greens). But it is more likely to make you lose weight if the gluten was causing you to have inflammation and retain water.

it will make you lose weight because if you eat gluten you have a gluten belly so when you stop it slowly starts to go away

As long as you are still feeding yourself properly you should be ok as long as you eat comparable food for those you will have to omit
