Generally, soft tofu is used sort of like a dairy substitute, to make desserts like pudding, pie filings, or to make dressings, spread, sauces, dips...all sorts of pureed or blended dishes. It is sometimes used whole (as cubes) in thin soups, such as a miso soup, and it could be used to make a "creamy" soup without dairy.

Smoothies, tofu "ice cream", tofu frostings, puddings, cakes, mousses, base for a sandwich spread (mayo alternative)

I've used silken tofu in smoothies, puddings, and pies. It also makes a handy egg replacement.
