Lactose free cheese??????????
Before putting this question on Yahoo Answers I noticed a prior question of whether such a thing as lactose free cheese exists. The winning Answer claimed that "lactose free cheese" is something that tastes like cheese but is made from vegetables. There were other answers but none that said that "lactose free cheese" is dairy. Well, I have homes in both the USA and (Quebec) Canada. I have never noticed a package of American-made cheese labelled as lactose free but in Quebec almost all cheeses are so labelled!!!!!!!!!!!! And they taste like regular, good cheese. So how can they or any cheese be lactose free????????????

When they process the cheese they have a special machine or equipment to remove the lactose so then they can still consider it real cheese. Others are created to be "cheese" but there is no actual dairy in it so therefore it's not cheese but it could be vegan cheese.
They have now come out with milk and it's real milk but they have removed the lactose from it for those that are lactose intolerant.

In general, eating any *aged cheese* such as cheddar should not affect those with lactose intolerance because lactose -- the major carbohydrate in milk -- disappears within 3 to 4 weeks after the cheese is made. More info at the link!

The higher the Butterfat and Milk solids on the label the less or little lactose is in it, as a former chef and slightly lactose , I use no dairy or little, here in Toronto to we have a line of lactose free creams, cheese to Black Diamond here makes a lactose and salt free one.

they use an enzyme called lactase that literally eats all the lactose( milk sugar) but many people are not lactose intolerant they are actually allergic to a protein in dairy products in which case lactose free will make no difference
