The eggs start the process of being converted into glucose - just like most other food choices.
Cholesterol is not the health issue it was at the turn of the century. The Lipid Theory which caused the alarm has been debunked, and cholesterol and saturated fats are no longer dietary lepers.
Sugar is the dietary villain. Starchy food choices like breads, pastas, cereals, rice, and potatoes are a close second.
