If you can find young or baby kale, you can use it in salad. I find regular kale to be to tough to use raw in salads. Even when only lightly cooked it makes for pretty tough chewing. For use in salads, julienne the kale very thinly, toss with vinegar and oil and allow to sit in the fridge anywhere from 3 hours to overnight.

I pretty much do the same as Sara mentioned. I just had a great pizza the other day with kale pesto, porcini mushrooms and asagio cheese. Yum-o-la. I also make homemade kale chips (so much cheaper than store bought). I take 2 large bunches of Nero (Dino) Kale, wash & spin them dry in salad spinner, fold the leaves in half & remove the ribs by cutting them out with a paring knife, place them in a large salad bowl, drizzle over soy sauce/alternative (I use Braggs Amino Acids-a soy sauce alternative that has only 160 mg of salt per 1/2 tsp as opposed to 1000mg + in so called "Low Sodium Soy Sauce") & toasted sesame oil. Toss well and place individual leaves on baking sheets. Bake at 375 for about 7- 10 min. or until they are crisp.

Where I live kale is one o the traditional vegetable options in 'stamppot'. I usually make it with veggie 'bacon' bits and or veggie sausage. Not usually big on meat substitutes, but they work very well here.

Just chop the kale and boil, boil and mash the potatoes, mix and season. I like mustard as seasoning in this particular combination.

Most people boil/steam it. Depending on the type it is, I sometimes eat it raw in a salad or on a sandwich. My favorite way is to stir fry it with leftover cubed chicken. Oh...and you can put it into your smoothie. It really has no strong flavor so it just blends in with your bananas and strawberries.

Being a dam'yankee in the South, I stir-fry my greens, including kale. I add lots of minced onion and, sometimes, meat, such as beef or sausage. Not traditional but tasty.

I like to make kale chips. You remove the ribs, put the leaves in a large bowl and drizzle them with olive oil, then put them on a baking sheet and sprinkle them with parmesan cheese. Bake them for about 10 minutes in a 350F oven--turning them over to get them evenly crispy. They make a great snack.
