This might sound stupid, but can cheese go off?

Isn't the whole point of cheese that it's already off? If the cheese in my fridge is off and I can't eat it, is it's actually better cheese now, cheesewise?

Sorry. I'm such a cheese-n00b.

    Cheese can go off.

Cheese that is not intended to have a mold should not have mold.

Even a cheese that has a mold can get another mold that can be harmful.

Store cheese properly. It should not be stored in plastic wrap.

If the cheese is a hard cheese and there is mold on it you can trim the mold off removing 1/2 inch of the cheese past the mold and it s safe. Discard the moldy portion.

Soft cheese once it begins to mold should not be trimmed.
