Here's the instructions on how to harvest,dry & store sassafras root.
Identify a stand of sassafras trees and locate either young saplings or suckers growing along the edge of more mature trees.

Dig around the base of the tree with a shovel. Expose the long tap root of the tree, as well as any side shoots that may have formed as the root developed. Work with your hands to free the smaller roots.
Cut away any tiny, stringy roots with the edge of the shovel to free the larger roots from the soil. If necessary, cut sucker roots away from the main root of the mature tree with loppers or a handsaw. Retain the bark on the root, as this contains the majority of the essential oils.

Remove the trunk of the tree from the roots with loppers or a handsaw. Scrub the roots with a vegetable brush under running water to remove any remaining dirt. Leave smaller roots whole. Slice larger roots in half length-wise to improve drying.

Place the roots on a baking sheet and put the sheet in the oven set to 200 degrees to warm. Leave the oven door cracked open. Dry the sassafras roots for six to eight hours, until brittle. Store the roots for future use in a sealed glass container.
