Do you use sour cream when making cole slaw, waldorf salad or broccoli salad?

I can never figure out how to make the sauce or dressing for cole slaw (like KFC cole slaw, not the vinegary, sour kind) or waldorf salad or broccoli salad.

When I get these from delis or salad bars or KFC, they all taste sweet and like they have sour cream in them, but when I check online, there isn't any sour cream in any of the recipes. It's always just mayonnaise. I like mayo, but I don't want my broccoli sala to just taste like mayo.

So how do you make your sauce or dressing for it? (And I really, really don't want to taste the sourness of vinegar!)

    I use mayo, or Miracle whip, whichever I have on hand.

    You won't taste the mayo if you flavor it.

    for Waldorf salad, spoon mayo into a small jar, add either orange juice or lemon juice, and shake it until it is smooth. If you want, add a little sugar. Mom and I made the orange juice one, with no sugar.

    The trick to good cole slaw is not to overwhelm it with vingegar. The recipe called for 1/2 cup of it, I used a couple tablespoons full. I make my slaw with onions and cabbage, sometimes a little carrot, and Mom often used pineapple in it. You could put a little sugar in the dressing. And do the same thing, get your jar, add the vinegar and mayo and sugar, and shake.

    I make 7 layer salad, and the dressing is mayo, and sugar. there is parmesan in the layers, so it gets some of that. You make the salad the night before, put mayo on top, then sugar on that. It does some sort of reation, and is thick and gooey the next morning . That would work for your broccoli salad, the dressing that is.

    When you fix things in the shake jar, you want the dressing to pour, and be thick enough to stick to your salad . it you get it too thin, add more mayo, too thin, add more juice..

    Here is my copycat KFC coleslaw recipe...

    1/2 cup mayonnaise

    1/4 cup buttermilk

    1 1/2 Tbls apple cider vinegar

    2 Tbls lemon juice (fresh is best)

    1/3 cup sugar

    1/2 tsp salt

    1/8 tsp pepper

    1/2 tsp celery seed

    Mix ingredients and add a bag of tri-color cabbage slaw; then, let is marry for a couple of hours in the frig, stir and serve.

    When I'm rush for time, I'll grab a jar of Litehouse brand coleslaw dressing, which is usually found near the bagged salad fixings in the big groceries.

    It won't taste like mayo because you will be adding other ingredients.

    Sometimes the other ingredient IS vinegar in small amounts, sugar, salt, and pepper.

    When salt hits cabbage, it makes the cabbage weep and that juice also adds to the flavor of cole slaw or broccoli salad.

    Now some recipes call for Miracle whip instead of basic mayo and that adds another flavor as well.

    I personally start with Miracle whip, sugar, a splash of apple cider vinegar, salt, pepper and celery seed(if I feel like it)

    Use real Mayo, sweet pickle juice or crushed pineapple or its juice, some salt and celery seed.

    for coleslaw dressing I use Mayo, honey, drained crushed pineapple and celery salt or seeds

    for Waldorf Salad I don't add the pineapple, just the Mayo and honey with celery seed

    for some other salads, I use half Mayo, half sour cream, either honey or crushed pineapple

    a lot of times it also depends on what is in my pantry! I shop only once a month and when I run out, we are just out til time to shop again!

    but I don't happen to like the coleslaw at KFC!! too dry! has been sitting in cooler too long

    All of those salad dressings are basically variations on mayonnaise and/or sour cream/buttermilk/yogurt, in various proportions and combinations, depending on individual taste. Feel free to substitute to your heart's content...if a recipe calls for 1 cup of mayo, try 1/2 cup mayo and 1/2 cup sour cream or buttermilk., or vice-versa...vary the proportions to suit your taste. If you like the sweet flavor, feel free to add some sugar or honey to your own taste. Don't ever feel constrained by a recipe...think of them as suggestions and/or starting points, and let your imagination go from there. Many people prefer "Miracle Whip" (a mayonnaise-type salad dressing sold in North America) to plain mayonnaise precisely for its sweet flavor.
