Can I use Parmasean cheese in place of cheddar in biscuits? Or will it make the biscuits dry?

    Considering the relatively small amount of cheese you can use in a biscuit and still have the biscuit rise, the type of cheese isn't going to have much, if any, effect on the moistness of the biscuits. Parmesan would be an excellent substitute for cheddar.

    You can do it. It'll probably make them a little drier, but nothing that some butter can't fix. :) Use less parmesan than you would cheddar - maybe 1/3 to 1/2, because it's a much stronger cheese.

    Use provolone.
