extra virgin olive oil?

what is the difference between extra virgin olive oil and olive oil?

    the amount of time between picking, pressing and bottling.

    'extra' indicates it has less than 1% oleic acid. has a better taste and colour.

    Virgin i believe indicates it has been picked/pressed/bottled within 1 hour.

    normal olive Oil is a mixture of low quality oils that have been mechanically processed into a better product.

    but it's a little more complicated.
