Take raw milk. Add rennet so it separates into curds and whey. Dump it into cheesecloth. Clump it together. Tie up the cloth in a bundle and swing it around and around to get they whey out. Then put it into forms. Press it together. And clamp it to squeeze the stuff out. Flip it every couple of days. Good cheese in a couple of months

Sour milk, bug pee and animal stomach mucous.
They add bugs (bacteria) to milk.
The bugs drink the milk sugars and pee out acid.
Then they add rennet (animal stomach mucous or some chemical equivalent)
This forms curds (solid part) and whey (liquid part). You can see an example of both curds and whey in the moister brands of cottage cheese.
The whey is drained and the curds are dried, usually in "frames" to form blocks

Milk processed by bacterial cultures to the point where it solidifies and gains a different flavor. There's more steps, but that's as simple as I can make it.

Ive heard it has some of the cows vomit or stomach or something in to preserve it oh and also analoge to make more of it.
