are these mushrooms safe to eat?
If I've got some crimini mushrooms that have slightly darkened and have a mild amount of spotting on them, can I still cook them thoroughly and eat them without risking food poisoning? They don't smell, and aren't slimy or anything.

Funny - if all I saw was the headline question, my answer would be - if they aren't slimy and they don't smell, they are fine ;)
I'd eat them. Are you sure the spots are even new - not just dirt that was there when you originally bought them? Run them under some water and wipe the skins off with a paper towel before cooking them.
