I have to write an essay about "1 species that exemplifies adaptation at its most extreme" It can be any species I guess?

The question wants you to write about a creature that lives in an especially harsh climate.
I know of bugs that live in the Arctic/Antarctic and have antifreeze in them and an insect of some kind, for example. Not telling you any more, though, as you need to find out more yourself
