The "Rogue One" film itself is not an anthology. It's one film in an "anthology" of films. Each film tells a different story.
An anthology can be a collection of stories or other things, not just poems or songs. In this case the anthology is a collection of movies, and "Rogue One" is one of the movies in the collection.
The word itself literally means (in the original Greek) a collection of flowers. It's used metaphorically to mean a collection of beautiful poems or songs or movies or whatever.
