That is a very broad spectrum.
If you want to get away from fantasy, I would suggest police procedurals.
The Joe Gunther Series by Archer Mayor has evolving character development where the chief character (Joe) starts off as a Detective working for the Brattleboro Vermont Police Department.
So far I think that Mayor is up to Book 27 or so.
Mayor is a true "word artist."
If you are looking for characters in static environments and relationships, I would suggest:
The Nero Wolfe Series by Rex Stout.
I am a big fan of OLDER books...
There is a lot of "lost treasure" in the old books that has fallen by the wayside and been all but forgotten.
In this genre, I suggest the PULP FICTIONS. Some of the best stories ever written came out as series in the pulps e.g.; The Maltese Falcon and Sherlock Holmes.
Many of the old stories are VERY politically incorrect according to todays standards BUT... they give you an insight into people's mindset in the past.

Try the earthsea series by Ursula le guin. It's very good. The first book is called a wizard of earthsea. It's similar to harry potter, but written in the sixties. Two more really good series are the I am number four series by pittacus lore and he percy jackson and the Olympians series by Rick riordan. If you have had siblings or close friends that you bickered back and forth with in childhood, then you'll find the interactions in Percy jackson hilarious.

Some people find this childish, but I love all the mythology series by Rick Riordan:

Magnus Chase and the Gods of Asgard

Start off with the Percy Jackson series by Rick Riordan. It's an urban fantasy twist on Greek Mythology.

Old enough to be in the public domain - Lensman series by E E "Doc" Smith. Space opera of the sort that inspired Star Wars.
