Sports teams--often but not always associated with schools--which are fairly evenly matched can form conferences in which they each play one another, and the teams with the best record of wins play one another for a conference championship. This is quite common in college sports.
When you play a non-conference opponent, it just means that team is not a part of the conference. If their skills are similar, they can still produce a good game, but it won't be counted toward conference wins and losses.

It means a team that is not from an association, group, affiliation, or league of which the opposing team is a member. That's what makes them "non-conference"
