Does Silvester sound like an old man's name?

No. It's an older name, of that there is no doubt. But with Silvia, Sylvia and Sylvie being popular with girls nowadays, alongside Jasper and Casper for boys, the trends make Sylvester seem fresh and up to date. In otherwords, it's vintage but in a really chic and stylish way. Having said that, I prefer the 'y' spelling as that tends to be the standard.

Silvester sounds like an older man's name, yes. However I do not think it's that bad. It just sounds like more of a surname to me. I have only seen it as Sylvester, with a Y, but since it comes from the Latin "silva", I deem it acceptable to spell it Silvester.

No I don't think it sounds like an old man's name. I know 2 Sylvester's an one is a teenager and the other is only like in his 30's or so I think.
Plus it also reminds me of the baby's name in the movie "Baby Geniuses" lol.
I think Sylvester looks better, but that's also the only way I've ever seen it spelled.
