In my area,(Merritt Island, Florida) lion fish are on the menu at many restaurants. During lobster season, we are allowed to take extra lobster if we are also taking lion fish.
They are really quite tasty, but we take a pair of shears and snip the spines off before we stash the fish.
My cat loves lobster, but won't touch the lion fish.

Yes. You just need to be very careful of the poisonous tenticles and fin tips when catching and cleaning them. The meat itself is not poisonous.
