From a typical gas pump, when I select high octane (92), how much gas am I getting from the last guy who pumped (which might be 87 octane?

    ...for example...there seems to be about 8 feet of hose which is probably filled up from the last guy. So I'm just wondering if my motorcycle is getting the first gallon or so at low octane?

    Not enough to worry about.

    I've run Premium in my motorcycles over 25 years with nary a problem from fuel.

    NONE. There is a reason why the hose connects above the level of you head. GRAVITY empties the hose.
