So tell me when and why I'd ever use uefi?
I was struggling to get my computer to boot last night and searching all over the internet for the right boot options in bios. My uefi was disabled and I couldn't figure out if I should have it enabled or not.
From the internet, it looks like it's something just like bios. So when and why would I use that?

It is a modern replacement for the antiquated BIOS which is still used in many computers. Apple Macs only have a UEFI and other computers from the launch of Windows 8 in 2012 or later are required to provide support for the UEFI firmware.
