How to pay employees/labor in this specific scenario?
An economics professor at my community college who runs an “Entrepreneurs club” has received permission to start a small student based business on campus. We are planning to start a food stand and are still discussing the specifics. The biggest thing we are unsure about is the best way to pay the students who work the stand. We are thinking of doing a commission based pay to avoid losing money at first. Profits will go mostly to paying the students and funding future projects. The community college is in Colorado. Any input from business owners is greatly appreciated.

Can you sell food? Food has very strict regulations. You need to make sure that you are able to comply with all health department regulations.
I'm not exactly sure how a restaurant would pay employees via commission. Basicaly, you are "attempting" to say that if you work the crappy hours you won't make money because there are not many customers during that time? Why would anyone work for you then?
I say "attempting" because what you are "attempting" to do isn't even legal. Research non-exempt commission based pay.

Regardless of "how" you pay, you still have to meet minimum wage regulations. So, pay minimum wage which keeps your payroll costs as low as possible.
