What would be the situation on Earth if it rotated just once per orbit around the sun? How might the weather be altered.?

If it was like the Moon-Earth system one side of the Earth will be in perpetual daylight and it would get fried while the other side will be in perpetual night and freeze

Achtung is way wrong - not 24 hours of sun or darkness but 182 days of each or depending on exact rotation details much longer - moon-Earth has one side always facing earth and Moon rotates once per orbit.

In answer to your question - there would be no weather, probably no atmosphere and with that slow rotation, no magnetic field to stop radiation.

Well, I'm sure you get fed up with 24 hours of sun or darkness, and the rain, continuous with very nasty winds would blow your **** off.
