95 firebird formula temp gauges falls to 0 sometimes?

So I was driving and the temp gauge is in the normal 185 and all of a sudden its goes to 0 then 2 min later it shoots back to normal 185... The next few days its works normal. Then stop for gas after driving and start it back up and its at 0 again keep driving it for 8 miles and it starts working again shoots back up to back up to 185.. Guessing its not the thermostat but the coolant temp sensor maybe? is the car safe to drive for away when it does this will it overheat maybe as I don't have the $ to fix it just spent $280 i for new brakes and rotors.

Update:

The coolant is full and I have a low coolant sensor when it drop 2 inches in the radiator so its not that. and I have bleeder valves if air was trapped in it the temp gauge keeps rising intill you bleed it or your engine blows from overheating. my temp never rises past the normal 185 when the gauge is working and when it stops working and then starts to work again it still only shoots up to the norrmal 185

    Check the coolant level. If the coolant is too low the correct temperature won't register. If the coolant is full (or if you add some) let the engine run for about 15 minutes with the radiator cap off. This will bleed any air that might be trapped in the system.
