    We have a rosemary bush in the side yard. One day I realized it was an herb as well as a decoration. So, I cut 2 12-inch branches off, peeled the needles off and chopped them up. I got just under 1/4 cup of chopped rosemary.

    Browned four cloves of garlic in olive oil, browned six chicken thighs in the olive oil and garlic, added the rosemary and half a cup of dry white wine and let them simmer for 30 minutes. Fresh herbs are much better than dried ones.

    I'm pretty sure other people have used rosemary, garlic and white wine with chicken, and I know there are a gazillion recipes that start off "brown four cloves of garlic in olive oil ..." but I came up with this one independently.

    I made a kale dish a couple of times now. All original from my own mind. Serves - 1

    Ingredients:

    1 garlic clove finely diced

    1/2 an red or white onion (diced)

    1 potato (diced)

    1/2 cup shitake/white mushrooms (cut in half)

    1/4 cup of cilantro (diced lightly)

    1/2 an apple (thin sliced and cut in half)

    2 cups of kale or more

    1 plum (diced)

    1/2 a tomato (diced)

    Salt

    Pepper

    Cumin(pinch)

    Soy sauce

    Teriyaki sauce

    Worcestershire sauce

    Red wine vinegar

    Prosciutto flavored olive oil (or regular olive oil)

    1/2 tablespoon of butter

    How to make:

    1. Prepare all the ingredients above

    2. In a large frying pan, drop 1 TBSP of olive oil and a little butter. Heat it up on medium high until butter/oil melts. Add the potatoes, onions and garlic to the pan. Heat until onions are pre caramelized and the potatoes are fried.

    3. Reduce to low heat and add the following in order: tomatoes, mushrooms, apples, cilantro, kale, and then plums.

    4. Mix & add small amount of sauces/salt to taste/sauté/Serve hot

    Cauliflower casserole that strongly resembles macaroni and cheese, but cauliflower. Good stuff and a huge hit.
