Ladies are taught by their mothers since they are little girls to sit properly and to cross their legs. It shows that she is raised well, shows the girl off as lady like, sophisticated, elegant, very much in control of her femininity. Women who sit with open legs are considered trashy, open like 7-11, and no respect for themselves or tomboyish.
Maybe you have not been around girls that are very sensual, beautiful, gentle and feminine. Definitely not to keep it tight.

It is more comfortable that way and keeps them warmer in general.
The thing is, the reason guys don't cross their legs, generally, is because crushing your balls together is not comfortable.

That, like most of body language is not at a conscious level. Essentially,it is a protective measure and you can read it as saying, "Nuh-uh, you ain't getting none today."
