Why does the Bible say that the Moon is only in the sky at night? The Moon will be in the sky in the daytime during the great eclipse.?

Yes, and I see the moon often during the day as well. Sometimes a quarter moon, sometimes a half moon and sometimes a full moon, at times about 3PM.

You mean, this is the very first time you've noticed that the moon is in the sky during the day? How old are you?

The moon is there at all times. It does not show in sunlight so hardly 'governs' anything

Note that the verse you quoted does NOT say the moon is only in the sky at night. It says the moon is the governing astrological object at night. While the sun is the governing object in the day. That is a true statement. During the day the sun dominates the moon. Even during an eclipse the moon is only visible because of the sun. If the sun was not in that position, you would not see the moon.
So the Bible is correct in what it says. You just have not read it carefully.

Genesis 1: 16: "And God proceeded to make the two great luminaries, the greater luminary for dominating thr day and the lesser luminary for dominating thr night, and also the stars."

So you posted the scripture.....and you still do not see that the word "Only" is not there...

It says the moon governs the night. It doesn't say is present only at night. And that's where you fail at understanding the verse.

Because the people that wrote the Bible didn't observe the moon.
