    No really sure if it fits but I've always liked the way Time Passages by Al Stewart seems to have nothing left to do towards the end, and then the sax chargers again to add a bit more to the end of the song. Also the songs Honky Tonk Women by The Rolling Stones and Jeanie's Got a Gun by Aerosmith feature a mid-section in which every instrument seems to take their own way. Progressive tracks might fit better in your description, like Roundabout by Yes. You have to choose whether to follow the guitar, the bass or the drums, it's like listening to three different tunes at the same time!
