I recently watched Fate/Zero and Fate/stay night, and it has left me puzzled

The first Shirou who became Archer, since he didn't meet an alternate version on himself, and he summoned Saber, who did Rin end up summoning?

Also in Unlimited Blade Works, after the fight concluded between Shirou and Gilgamesh, Archer shot Gil in the head and amicably told Rin his good byes. The thing that confuses me is when Archer lost, he still believed that he was right and Shirou was for following Kiritsugu's ideals. When Gilgamesh killed Archer, did Alaya decide to send a counter guardian, Archer Emiya, and if so are these two different Archers? One who abandoned his ideals, and one who stayed on the path

    Shirou never needed to meet an alternate version of himself to become Archer. He becomes Archer regardless, so that in no way affects Rin's summoning.

    In UBW, Archer survived. The Archer class has the ability to act independently for a while. That allowed him to stick around and then deal that final blow.
