Hanukkah = latkes!!!
EDIT: This is my mother's latke recipe. It is so NOT the typical latke - most people would consider it sacrilegious to not grate the potatoes. That is - until they taste these ;)
4 medium to large potatoes, peeled and cubed
1 small onion peeled and cubed
2 eggs
2 tbsp matzo meal (plain dry breadcrumbs should work as long as they are fine)
salt
vegetable oil (need a lot to cook in)
Blend eggs, onion, matzo meal, salt and 1 C cubed potatoes in blender, then add remaining potatoes and blend.
Heat oil in big frypan, drop spoonfuls of mixture in and spread out. Brown, turn, brown the other side. Drain on paper towels.
NOTE: this can be a very oily, stinky, smelly mess - but it's worth it. We often make these, freeze them, then just pop them in a hot oven to defrost/ heat. If not frozen they can still be made ahead and reheated/crisped in an oven.
