1) Christians: What color were Adam and Eve?
No one on Earth knows the answer to that question.
2) How come we never hear the story of the other people they met.
There is.
It's called "Genesis".
Although it certainly does not mention ALL of the other people that they met, it does name some of them for us.
3) Is there another book for them?
Not of which I am aware.

First of all the "out of Africa" model for the human race has been relegated to the modern day myth room!
One must keep current on the latest science based fantasies.
As for what color- that would be hard to say. The female human as enough eggs it is claimed to repopulate the earth. It is also been claimed that people tend to seek the "ideal face" when looking for a spouse and that this model is developed by those they are closely associated with. I say all of this because what ever "color" Adam and Eve were, the genetic make of both of them was such that many different colors of people developed.
Noah's sons and daughter in-laws also must have had enough different genetic materials to also result in different colors of skin.
Interestingly the Arabs and Jews claim to be the "purest blood" on the face of the earth. They do not like to be classified as the rules of the western world. So it could be they were the same color as the pure blooded Jews are.
On a side note, seldom is skin color mentioned in the Bible! While we may wish to identify ourselves or others by skin color, that is not the differentiation of the Scriptures. In the Scriptures there are two races of humans. One race hates (or has no) God and the other race "calls on the name of the Lord". The only other reference that comes to mind is "The sons of God saw the daughters of men .....". With Adam being identified as the "Son of God" (Luke I believe) it leaves open the question of just exactly who were the "men" who had daughters in the earliest chapters of "THE BOOK"!
It seems the more I know, the more I know I don't know!

"Adam and Eve" are allegories, symbols for the multiple forefathers of the various human strains that developed concurrently on Earth about 2 million years ago, and further diversified into "modern man" about 2 hundred thousand years ago.
Each of these forefather groups gave rise to the various human strains, such as the Neanderthal, the Oriental strain, the African strain, the Pacifica strain, etc. Further mutation and diversification produced the "Caucasian" strain and the strain that became the Native American.
This explains why there were people living in the land of Nod according to the Biblical myth - there were many strains of humans on the planet.
