Aircraft: I saw an unusual contrail. What sort of jet makes them?

Central US, late March, clear, calm. A regular white streak with uniformly spaced "puffs". Reminded me of a flying steam locomotive. The streak went clear across the sky with no craft visible. What sort of engine puffs out condensate?

    I would guess

    (and I am just guessing)

    that rather than the engine puffing out intermittently (as is the case with a steam engine cycling)

    the jet was traveling through different temperature air pockets

    some of which were cold enough to crystallize the jet engine vapor and thus display the contrail

    and some of which were too warm to do that

    To save petrol, pilots use acceleration intermitantly, the way we use acceleration during cruising.
