what is better to take an 8 week online class or a semester long online class?

Depends! If you have plenty of free time per week, then the 8 week on will be just fine! But if you don't have much time, maybe the semester long one. The 8 week courses usually fit all the material on that a semester long one does. This means more work/week than the semester long option, but it does end sooner! So it is really up to you and your schedule:)
