Is there a way to stop my iPhone from falling asleep while using Apps such as YouTube and Twitch without completely turning off Auto-Lock?
Update:
I don't want to disable Autolock, because I still want my iPhone to lock when I am not using those apps.

Yes. Go to settings, then display and brightness and change your auto-lock time. You can even set it so it never auto locks.
