Could a bad coolant temp sensor be my problem?
Can a faulty coolant temp sensor cause my '03 Rodeo 2wd with the 3.2 V6 to intermittently run like crap? When it happens the Idle bounces. Pressing the gas has no effect at all. I ask about the coolant temp sensor because the needle on the temp gauge falls all the way to the C. Strangely, If I'm running the A.C., turning the heater on will sometimes correct the issue. Last time it happened, I turned on the heater and it didn't help. When I turned the A.C. back on, it instantly corrected the problem. No check engine light either. I've had it scanned and nothing was stored.

EAsy enough to check with live data on a scan tool. Just watch the ECT readings when the engine acts up

Have you even taken the radiator cap off to check the coolant level in the radiator? You might be over heating your motor with out knowing it. Temperature gauges are not accurate when the coolant is low.

You should pull the OBD II trouble codes and see from that where the problem is and what parts to test.

From symptoms that you are giving me I would have to say to you that you're coolant fan that is supposed to stay on and cool the radiator is broken or the relay that runs it is burned out or the coolant temperature sensor is not turning on the fan. The reason turning on the air conditioner fixes the problem is because it forces the second fan to come on there by cooling your car which is overheating like hell!

Get it scanned by a "REALmechanic" this time. A/C runs on electricity and so does the sensor(AND SO DOES THE CAR) so am thinking there is an electrical issue. Maybe, just maybe you need a "tune up or plugs or both?"
"Pressing the gas has no effect at all." On an ice cold engine, when I step on the gas the engine will rev so high as to blow up the engine. It does not care if it is warm or cold. It got additional gas and that is all it knows.

The sensor which operates the gauge is usually separate from the one that inputs the computer.
