Do you think no one should try to change stuff that is written in the Bible? It's wrong to add or change scripture. Like food laws.?

Revelation 22 states what will happen to those who add or take away things from the Bible. They will be punished.
Revelation 22
18 For I testify unto every man that heareth the words of the prophecy of this book,
If any man shall add unto these things, God shall add unto him the plagues that are written in this book:
19 And if any man shall take away from the words of the book of this prophecy,
God shall take away his part out of the book of life, and out of the holy city,
and from the things which are written in this book.

It was easier to say "Don't eat shellfish" than it was to explain bacteria to ancient Hebrews.

Jesus authorized the Holy Catholic Church that he personally founded, to make the necessary "calls" about such things, when he gave the Apostles and their duly ordained assigns and successors the power to bind and loose, on earth and in heaven. Only that on which the Catholic Church authoritatively ruled, became a valid part of New Covenant, Christian practice and worship. The rest was relegated solely to the Old, non-salvific, Covenant - which had been fulfilled by Jesus Christ and respectfully set aside - in favor of the New and saving Covenant, in his blood.

But it has already been “changed” many times: the original texts were selected and edited The results were not written in English and there have been over 400 different translations. It might be interesting to know how many different versions of The Bible there have been - I would guess many thousands.
There was even one version that because of an error said something like, “Thou shalt commit adultery”.
People “working” on the first versions (which would be mainly in Ancient Greek and Hebrew) would “edit” them so they said what they felt was correct at the time and would be accepted.

Yes it is wrong to add or take away from the scriptures because that Word is God's Holy Will and Testament, so it cannot be changed.
However, in regard to food laws, you are probably referring to Old Testament LAWS for the JEWS, which we are not under in the New Covenant (New Testament) in Christ's blood, which He shed for our redemption.
For example, the Jews were not permitted to eat pork because it was apparently an unclean meat; but God told Peter not to call common (or unclean) what God had cleansed (Acts 10: 10 - 15 on).
In addition, the Spirit expressly says, that in the latter times (which is now) some will depart from the faith giving heed to seducing spirits and doctrines of devils, having their own conscience seared with a hot iron and not only forbidding marriage but also commanding to abstain from foods which God created to be received with thanksgiving by those who believe and know the truth.
For every CREATURE of God is good; and nothing is to be refused if it is received with thanksgiving, for it is sanctified by the word of God and prayer (1 Timothy 4: 1-5)

I do not say this, but God confirms it, whoever dares to modify the words of the Holy Scripture, or with the additional words, will go to perdition!
Revelation 22:18-19.

Every time the original language Bible is translated into other languages there is a risk that some original words will be changed, either wittingly or unwittingly. Only people who are qualified scholars in ancient Hebrew, koine Greek and Aramaic should be let loose on Bible translations into other languages, for it absolutely is wrong to add to, or change what the Bible states. An example of some people with an agenda adding words to the Bible is the Jehovah's Witnesses adding the words ''union with" into various New Testament chapters, to detract from how the Bible shows that every single genuine Christian has the Holy Spirit indwelling them, so that Christ is "in" them (by the Spirit). The JWs translate "in union with" [Christ] many times in their New World Translation, adding those 2 words that are not in the Greek text, to fit one of their corrupt doctrines.
As for the Old Testament Mosaic laws, those applied to the new nation of Israel formed at Mount Sinai, and the food laws only apply to them. They never applied to non-Jewish peoples. The New Testament shows how Gentiles (non-Jews) are free from such dietary (also ceremonial) laws of the OT. Read Acts chapter 10 for that, plus Galatians chapter 3. It shows that the law was designed to convince people that they were unable to wholly keep it because of their sin, and that only what Jesus did deals once and for all with our sin. Paul explained, "All who rely on observing the law are under a curse, for it is written: 'Cursed is everyone who does not continue to do everything written in the Book of the Law'. Clearly no-one is justified before God by the law, because 'The righteous will live by faith'. The law is not based on faith. On the contrary, 'The man who does these things will live by them'. Christ redeemed us from the curse of the law by becoming a curse for us".
If you have faith in what Jesus achieved, to get rid of all your sin on the cross, you will repent of your sin before God and trust only in Jesus' finished work on the cross to be saved. And you will know you have been saved, not by anything you've tried to do, but purely because of the love and grace of God, in Christ. The Holy Spirit will convict you of your sin and lead you to saving faith. You will know it when it happens and be assured. You need to really study the NT, prayerfully.

(Spoiler alert) The Bible was written by people.
Now we've got that out of the way why not edit/update it to take account of modern sensibilities if you feel the need to follow what it says.

I'm a sinner. I make mistakes. I'm trying to follow God's laws the best that I can. I hope he can forgive me for my sins.
