Is aged cheese more aged based on fridge time after purchase?
I'm watching videos and got curious, so as an example: you have 18 month aged cheese and it stays good in the fridge for another month. Is it now 19 month aged cheese?

No, there are certain conditions that cause the effects you want in aged food items. Once you take them away from those conditions, wrap them in plastic, and throw them in your fridge, you have stopped all of that. In fact, you are making it worse, temp shocking it, getting leftover roast beef stink on it, and drying it out.
The most obvious example of this is whiskey. The aging is the wood cask. As soon as you take it out of the wood, it stops getting woody agey stuff on it. It oxidizes from the very moment coming out and quickly turns to cloudy puke, be it 3 month or 12 year cloudy puke you left out uncovered after the party.
