    "The Joy of Cooking". It gave me a lot of knowledge on the basic preparation of dishes I was not familiar with when asked to prepare them in an institutional (restaurant) setting. It has substitutions for certain ingredients, metric measurements. It even has a recipe for Whale. I still remember the author's name after 30yr. Irma Rombauer Becker.

    i like to cook all types of books in the winter for warmpth and my favorite book to cook has to be dr suesse because of the lovley colored smoke.

    I've got quite a few but my go-to recipe books are "The Good Cook's Encyclopedia" or "The Farmhouse Kitchen."

    The first one was my mother's and she'd had it for more than 40 years.  The second was from a cookery programme that I came across in a bookshop.

    Better Homes is a MUST!!!

    If you can get your hands on the "Golden" buy it, mine is in pieces and duct tape bound, been in the family for like EVER, but there is a difference between the new one and the old.

    They changed a bunch of the recipes.

    Yeah, Better Homes is the Go To.

    No kitchen should be without and almost like a no brainer.

    Other than that, "Joy of Cooking".

    So much has to do with family recipes, or what you learn from working in a kitchen.

    Or just learning and doing it yourself.

    I have way too many favorite cookbooks to put any one over all the rest.  

    How could anyone beat Julia Childs, but I also love Caprial Pence, James Peterson, Marion Cunningham and many others.

    My preference is for 'real' food and not trendy stuff and I tend to avoid super complex cookbooks.

    I recently SCORED big time at my local thrift store, someones entire kitchen and cookbook collection got donated and I was able to pick up about 100 books that were all pristine and very expensive, including my first ever Su Vide book for only a couple to a few bucks each.  Also lots of the cooking equipment that was donated.  Still working my way through that big pile...

    If you had asked me a year ago it would have been a different book but right now I LOVE my America's Test Kitchen book. I have had it for just about a month and I have made 6 or 8 recipes and every one has turned out GREAT. 

    Prior to that I would consult "MY" cookbook a binder that I have been keeping recipes in but I will always pull Joy of Cooking or the OLD Betty Crocker book when I want to l make an old family favorite. I also use the Joy of Cooking as a reference book for substitutions and for conversions.
