What is the definition of concessions ?

"How much concessions have been given to the diner."

    In this context, 'concessions' means 'chances', but it should actually read:

    How many concession have been given to the diner.

    In this context, it means something extra or more than ordinarily given.

    How many concessions would be far more likely.  A concession is an allowance, a form of permission that is given in place of what would normally or otherwise not allowed.  It is an individual and countable thing.
