Which on is the truth in Scripture?

None the scriptures are bronze age nonsense with added catholic fables and lies. Nothing more or less

Its impossible for God to ever lie.

Hebrews 6:18 — So God has given both his promise and his oath. These two things are unchangeable because it is impossible for God to lie. Therefore, we who have fled to him for refuge can have great confidence as we hold to the hope that lies before us.

No gods exist and "holy" books like the Bible and Quran were simply written by humans.

The bible has been declared BY MEN to be the literal word of God.  Nowhere in the bible is God quoted as saying the bible is His message to Mankind.  That's a pretty significant absence - especially since there are other religions where God has specifically said in scripture "This is my message to you."  He doesn't say that in the Judeo-Christian books.  Men have put those words in His mouth, making claims about the divinity of the bible the God himself does not.  That's worth remembering.

That doesn't mean that the bible has no truth or value.  It is a collection of stories covering several millennia of Man dealing with SOMETHING that guides and corrects Man in a seemingly coherent way, but that Man can't see or comprehend.  This Something called God provides Man with guidance regarding much of the things that Man has gotten himself involved in across that epoch, including misogyny, rape, polygamy, slavery, murderous plotting, oppression, warfare, and even genocide.  God doesn't direct Man's affairs - Man is in charge of that.  God does appear, though, to exert a coherent influence on Man's awareness of his feelings regarding these things that he has chosen to do.  And that's the key to the value of the bible - a fact which many of its proponents completely overlook.

It isn't a playbook to pattern one's life after.  It's an illustration of how Man's feelings reveal what is best for Mankind, in keeping with the Incomprehensible Something that seems to know what's "right" for Man, better than Man himself.  That's the truth in the Judeo-Christian scripture.
