How come Christians don't practice animal and human sacrifice like we Hindus do?

Answer: They are no longer necessary.  The single, infinite punishment of Jesus Christ and his death and resurrection suffice for our spiritual needs.

Christians see the sacrifice of Jesus on the cross as a perfect and eternal sacrifice which removed the need for animal sacrifices. Animal sacrifices were a mere symbolic gesture of devotion and were insufficient to take away the guilt of sin.

Particularly in the Catholic and Orthodox understanding, the eucharistic worship which a Christian priest offers at the altar is a direct participation in the sacrifice which Jesus Christ offered. And just as those who ate the flesh of a sacrificed animal were participants in the sacrifice of that animal, so those who eat the Body and Blood of Jesus Christ, in the form of the eucharist (holy communion) are united to his sacrifice.

Nowadays, religious sacrifices and rituals may come with 

good intentions, but they are performed by those who have 

less intellect than primates. 

God can create a thousand universes at-a-time.
