Can the tension of pedals be adjusted and pedals themselves more outwards to the seat?
For some reason I feel a lot more confident driving when the pedals have a bit more tension and the pedals are further away from the firewall. I don't seem to like the other car more because the pedal is a lot softer and closer to the firewall which makes acceleration a bit more sensitive. I like a bit of tension and the pedals furthest away from the firewall.
Somehow I think the tension on the gas pedal maybe due to a rusty pretensioner or dirty throttle body,. I like it better this way because of the tension.

I had a school bus driver who was very short. She had wooden blocks attached to the pedals so she could reach them.

The tension is usually controlled by a spring. It's not impossible to change to a different weight of spring tension but it's not easy and not something someone that knows what they're doing with vehicles will mess or even bother with. Adjust the seat for the distance the pedals are from it.

Some can be adjusted for tension and some can't. As for the position of the pedals, in most cars it cannot be adjusted, which is why the seat is adjustable.
