At one time California estimated that 10% of all cars registered and on the road in one way or another violated California restrictions.
So it would be a fairly reasonable assumption that 10% of the guns that are supposed to be registered in California are not.
But the basic misconception here is that there are cars operating on the roads in California by Californians that are not registered legally! In which case the observed 80-20 rule comes into play. Suggesting that 20% of the fire arms that should be registered in California are not.
Best guess 20%!

Maybe if you ask there you will get the answers you are looking for.
The fear should not be in registered guns or those who register them.

in the decade after dunblane in the wake of a handgun ban, use of these weapons in crime doubled, and now a four fold increased, is being acknowledged, if you ban something you loose control of it totally because its driven underground, and on the black market supply will always equal demand.

it was estimated in the uk before the ban on most handguns, that about 10% of weapons were held by fac (firearm certificate holders) holders, the remaining 90% being illegally held weapons,

ownership of illegally held weapons can only be estimated, as there is no actual record of them, this can only be used as a yardstick,
in the usa where the requirements for legal gun ownership are a lot more lenient than in the uk, it would be logical to assume it has a higher percentage of legitimate gun owners than the uk, per head of population, maybe 15%, obviously the actual figure would depend on each particular state gun ownership policy.

Since gun registration is not required in California (except for lawfully-possessed assault weapons and personal handgun importers), that is both difficult to determine and pretty irrelevant.

70% of the handguns, 0% of the rifles that are not classified as assault weapons. CA does not register rifles.
