In ALL jurisdictions, it is legal to record conversations as long as all parties to the conversation are aware of the recording. The rules get more complicated if one or more party to the conversation is not aware of the recording.
As others have stated, under Alabama law, recording is legal as long as at least one party to the conversation is aware of the recording.

As long as you are part of the conversation you may record either phone or in person conversations. Alabama is a one party consent state. And you are the one party.

Alabama is a "one party consent" state, meaning that only one party to a conversation needs to be aware it is being recorded. If you were actively in each of the conversations, it would be legal for you to record it without notifying the others because you were a party to the conversation. If you were just listening in, you would not be allowed to legally record the conversation.
